The Freezer Chicks are joining in on the fun! We are joining the Dog Days of Summer Bloggy Giveaway hosted by Rocks in My Dryer!

4 boneless skinless chicken breasts, cooked and diced.
1 can cream of chicken (or mushroom) soup
1 8 oz carton sour cream
1 8 oz carton cream cheese
1 stick butter (or margarine)
1 can refrigerated crescent rolls
1 stack of ritz type crackers
1 stick butter.

Preheat oven to temperature for crescent rolls plus 25 degrees. Layer chicken in bottom of casserole size dish. Melt first stick butter and cream cheese in saucepan. Add sour cream and soup. Pour misture over chicken. Unroll crescent rolls and lay on top of soup. In saucepan, melt second stick butter. Crush the stack of crackers and add to butter. Spread crumb mixture on top of rolls. Put in oven for about 30 minutes or until crescent rolls are dark golden brown.

Here is one of our family favorites:

hicken Crescents

3 chicken breasts, cooked and cubed
3 ounces Cream cheese with chives
1 package herb croutons, crushed
4 ounces walnuts, finely chopped
2 tbsp. butter, melted
2 packages Pilsbury Crescent Rolls
Chicken Gravy

1. Preheat oven to 375 degrees
2. In a medium size bowl, combine walnuts and croutons; set aside.
3. In another bowl combine the chicken and cream cheese; set aside.
4. On a baking sheet, separate the crescent rolls. Spoon about 2 teaspoons of the chicken mixture into each crescent; roll and seal.
5. Dip each crescent in the melted butter and then coat well in the crouton mixture.
6. Space 1 inch apart on baking sheet and bake for 15 minutes or till golden. Serve with gravy over the top

We pour chicken gravy over them and serve them with mashed potatoes and green beans.

Cilantro Lime Butter:

2 sticks unsalted butter, at room temperature
1/4 cup chopped cilantro leaves
1 lime, zested and juiced
2 teaspoons salt
3/4 teaspoon cayenne pepper

Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Use immediately or refrigerate.

Slather this on hot corn on the cob. YUM!!

This is such a great recipe!

Black Bean Soup
2 cans black beans (15 ounces), drained and rinsed
1.5 cups broth (chicken or veggie)
1 cup chunky salsa
1 teaspoon cumin
sour cream
green onions

In a food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth. Pour into medium saucepan and heat thoroughly. Serve with sour cream, and green onions, if desired. So good with crusty bread

"Easy Peazy Cherry Pecan Crisp"

2 Cans Cherry Pie Filling
1 Yellow/White Cake Mix
1 Stick Butter/Margarine
2 Cups Chopped Pecans

Layer ingredients in 9 x 11 baking dish in order. (I cut the butter into pats.)
No stirring or mixing...just smooth it out evenly.
Bake at 350° for 30-45 minutes (do not burn nuts!)
Spoon and serve! Yumm-oh!

I used 1 can cherry and 1 can blueberry for 4th of July...oh so good!

MMmmm.. Ray Rocks! I really would love to win. Her is my quick recipe... It's so YUMMY and super EASY. (Mix equal parts of chili sauce and grape jelly and pour over meatballs) .. I like using the Costco ones and putting them over white rice. This one you gotta try!!

I don't need the subscription: I've got my own already. But... This came from an online freezer meal plan and this goes on top of Beef and Bean Burritos. I was a bit worried, and hubby loved it! I had enough to top the burritos and have a meal that night and another night. I just reheated the chili over low heat until warm. And it's not too spicy - which I like and easily made spicier. Green Chili

1 pound lean pork
6 tablespoons flour
1 tablespoon canola oil
1 small onion, diced
1 can (4 oz.) green chilies, chopped
1 can (16 oz.) tomatoes, cut up
4 cups water
1 teaspoon garlic powder
salt and pepper to taste

1. Cut up pork and lightly coat with flour; brown in oil.
2. Add onions and brown.
3. Add chilies, tomatoes, water, and seasonings. Simmer
for 1 hour.
4. Cool. Place in gallon freezer bag.
5. Label with date and heating instructions (see Beef and Bean Burritos). Freeze with
pan of burritos.
6. Store unused portion in refrigerator.

Favorite summer sheet cake
Duncan Hines Butter Flavor cake mix, made according to package directions, but add 1 tsp orange extract and 1 1/2 c. mini chocolate chips. Bake according to package directions, then cool completely.

Icing:
Mix 1 small pkg instant vanilla pudding mix with 10 oz whipped cream.

My husband's from Cajun Country, so here's our favorite Shrimp Etouffee recipe (sorry, it's going to take up a bit of space).

1/2 cup butter
1/4 cup all-purpose flour
1 cup thinly sliced green onions
1 cup chopped onion
1 green bell pepper, cored, seeded, and chopped
1/2 cup chopped celery
2 cloves garlic, minced
1 bay leaf
1/4 teaspoon dried thyme
1/2 teaspoon dried basil
8 ounces tomato sauce
1 cup dry white wine
8 ounces clam juice
1/2 cup water
1 tablespoon Worcestershire sauce
1/2 teaspoon white pepper
1 teaspoon Tabasco Sauce
1 tablespoon grated lemon zest
1 tablespoon fresh lemon juice
1/4 cup chopped parsley
1 1/2 pounds fresh shrimp, peeled and deveined (can also use frozen shrimp)
Hot cooked rice

In a large pot over medium heat, melt butter; stir in flour and cook until bubbly. Stir in green onions, chopped onion, bell pepper, celery, garlic, bay leaf, thyme, and basil. Reduce heat to low and cook, uncovered, stirring often for approximately 20 to 30 minutes or until vegetables are soft.

Increase heat to high and add tomato sauce, wine, clam juice, water, Worcestershire sauce, white pepper, and Tabasco; stirring, bring to a boil. Reduce heat to low and simmer, stirring occasionally, about 45 minutes or until thickened and reduced to 4 1/2 cups. Stir in lemon zest, lemon juice, parsley, and shrimp. Simmer approximately 2 to 3 minutes or until shrimp are cooked. Remove from heat and serve over hot cooked rice.

OOh, I would love this.
Jambalaya is a favourite here. Just saute a cup each of onion, green pepper, and celery for 5 minutes. Add 8 oz of turkey kielbasa. Then add 1 and 1/3 cup of salsa, 2.5 cups chicken broth, 1 cup of rice, a bay leaf and some cajun spice of some kind ( you can also add some oregano and thyme). Bring to a boil. Simmer for 15 minutes. Add shrimp or scallops and cook for 5 more minutes. Stir in some parsley and serve!

We love tomake our won forzen yogurt:
we drain plain or vanilla yougurt overnight in the fridge. The next day,we add a touch of sugar, some fruit, and put it in the ice cream maker. YUMMY!

Here's one of my favorite recipes:
Cottage Cheese and Sour Cream Pancakes

2 eggs, beaten

2/3 cup cottage cheese

3/4 cup sour cream

1/2 t. lemon juice

3/4 t. salt

1/2 t. baking soda

1/2 cup flour

In large bowl, combine all ingredients. Let the batter stand uncovered for 10 minutes. Spray large skillet with cooking spray and heat to medium high. Using about 1/4 cup of batter for each pancake, cook until golden on one side and around edge. Turn and brown the other side. Serve hot.

My family ADORE RR and I love her magazine...but I'm always having to search for it at the store. It would be a GINORMOUS blessing to get it delivered to my home sweet home!

Here's a recipe that I adapted from a Southern Living one and gets RAVE reviews. I basically took their recipe that had some unhealthy stuff and converted it into a more natural, more healthy one:

PEACHY PORK PICANTE

2 lbs of boneless pork, cubed (you can also substitute chicken)
Cumin
Chili Powder
Garlic Powder
2 tablespoons of olive oil
1 cup of ALL-FRUIT or JUST FRUIT peach preserves/jam
1 16oz jar mild salsa
Hot cooked rice
Sprinkle the meat generously with the 3 spices. I'd do about equal amounts of chili and cumin and a little less of the garlic.
Heat oil in a large skillet over medium-high heat. Add pork and cook. Stir constantly until browned/cooked on all sides.
Stir in preserves and salsa; cover, reduce heat, and simmer 15 minutes, stirring occasionally.

Crock Pot Chicken

frozen boneless skinless chicken breasts

cook on high for approx 4 hours
cook on low for approx 6-8 hours

We go for simple around here and
we love this grilled salmon...

Marinate (about 1 hour) in equal parts olive oil and soy sauce (also add about 15-20 shakes of liquid smoke to marinade).

Before adding salmon to grill coat both sides with mayo - will burn off and prevent sticking. Skin will pretty much just fall off (easily peel off) during grilling.

Thats it! It's so yummy - all my kids love it. We usually serve with Jasmine rice.

TACO SOUP

2 lbs. ground beef
1 onion, chopped
1 pkg taco seasoning
1 can kidney beans
1 can corn
46 oz tomato juice
2 T sugar

Brown beef and onion. Add to crock pot along with remaining ingredients and cook all day. Serve with shredded cheese, sour cream and Fritos.

One of my very favorite recipes is stuffed peppers!

6 small green peppers
1 lb ground beef
1/2 cup cooked rice (well, I do 1 cup cooked rice - I think this should say 1@ cup uncooked rice)
1/2 tsp. salt
dash pepper
1 slightly beaten egg
2 Tbsp. minced onion
1 can tomato soup

Steam peppers in 1 cup boiling water for 5 minutes. Drain. Cut top off pepper and remove the insides.
Brown meat. Drain ft, and rinse.
Add rice, salt, pepper, egg, onion and 1/2 can of soup. Mix well and fill peppers. Add small amount of milk to remaining soup. Pour over peppers and bake at 350 for 45 minutes.

We all love it in my house (although, admittedly, the kids leave the pepper as a bowl and do not eat it and the adults do LOL!)

I love Rachael Ray, and so do my three girls. I could really use some more inspiration for cooking and general household stuff!

Here's my easy-peasy favorite party finger food:

Flour Tortillas
Spreadable cream cheese (you choose the flavor)
Thin-sliced ham

Spread each tortilla with cream cheese (I like chives) and then top with a thin layer of ham. Roll up as tightly as possible, wrap with plastic wrap and place in fridge for at least an hour.

When it's time to serve, slice into cute and tasty pinwheels.

Yield: about six large or twelve miniature muffins

Ingredients;
1/2 c. butter or margarine, softened
1/2 c. sugar
2 eggs
3/4 c. applesauce
1 3/4 c. flour
1 Tablespoon baking powder
1/2 teaspoon salt

Directions:
Preheat oven to 425 degrees.
In a large bowl, cream softened butter and sugar until fluffy. Beat in eggs one at a time until light and fluffy.
Beat in applesauce. Stir together flour, baking powder, and salt. Add to butter mixture; stir just enough to moisten. Spoon into mufin cups. Bake in preheated oven about 15 minutes or until golden brown. While still warm, dip into melted butter, then into cinnamon and sugar combined.

Oh, I would love this one!! Here's a new favorite of mine - cool, refreshing and you don't have to turn on a hot oven. (Even low fat!)
Pineapple Coconut Cream Cake:
prepared angel food cake (cut into three layers)
jello pudding mixes - 1 french vanilla and 1 coconut cream
2 cans (16 oz) drained crushed pineapple
12 oz tub cool whip (the large tub)
Empty pineapple in bowl, mix in pudding mixes and cool whip. Mix well. Spoon between layers of angel food cake and over sides. yummy.

London Broil au jus

* 4 (6 to 8 oz.) boneless sirloin steaks, about 1-inch thick
* 1 garlic clove, peeled and sliced in half lengthwise
* salt & pepper
* 1 tbls. extra virgin olive oil
* 1-1/4 Tbls. unsalted butter, divided
* 1 Tbls. sliced shallot
* 1/2 c. lower sodium beef broth
* 1-1/2 tsp. chopped fresh thyme

Position oven rack 6-8 inches from broiler. Heat broiler. Pat steaks dry with paper towel and rub well on both sides with cut sides of garlic clove. Discard garlic.

Season both sides with salt and pepper and place in large cast-iron or ovenproof skillet. Drizzle oil over steaks, turning so that both sides are covered with oil.

Broil for 5 minutes, turn and broil an addition 4 - 5 minutes for medium-rare. Remove from oven and transfer steaks to a cutting board, leaving juices in skillet.

Place skillet on stovetop over medium-low heat; add 1/4 Tbls of the butter and shallot and cook until transparent, about 2 minutes. Add broth, increase heat to high and cook until sauce is thickened, about 2 minutes. Whisk in remaining tablespoon of butter and thyme. Slice steaks, spoon sauce over the top and serve.

This was wonderful. I made it first with top sirloin, but actually liked it better with the london broil because the slices were nice & big! This was so good, even my very finicky mom ate it, asked for the recipe and made it when she went home!

Creamy Chicken Enchiladas

1 small onion, chopped
1 can (10-3/4 ounces) reduced fat reduced sodium condensed cream of chicken soup, undiluted
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 cup (8 ounces) fat-free sour cream
1 cup (4 ounces) shredded reduced fat cheddar cheese, divided
1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
6 fat-free flour tortillas (8-1/2 inches)
2 cups cubed cooked chicken breast

In a skillet or saucepan coated with nonstick cooking spray, sauté onion until tender. Remove from the heat. Add soup, tomatoes, sour cream, ¾ cup cheddar cheese and ¾ cup mozzarella cheese; mix well. Place 3 tablespoons on each tortilla; top with 1/3 cup chicken. Roll up tightly. Place seam side down in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Top with remaining soup mixture; sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

2 cups salsa
1/2 cup brown sugar
2 Tbsp mustard
Mix salsa, brown sugar and mustard, pour over chicken. Cook/bake until chicken is done.
We generally serve this over steamed rice.

We are MAJOR mexican food lovers in my house, so our fave is green chile enchiladas. Here goes:

Combine browned ground beef (I use 3/4 lbs or so), 2 cans cream of mushroom, 1 small can of chopped green chilis, a small white onion, and 2 cans of green chili sauce in a sauce pan and heat until the flavors marry...

Spray a baking dish with some Pam and spread a bit of the mixture on the bottom of the pan.

Fill approx. 12 tortillas with the mixture and pour the rest of the mixture on top of the enchiladas. Top with a bag of mozzarella (or fiesta blend) cheese.

Bake 35 minutes at 374. YUMM-O!

I'm game for this one. Here is a favorite recipe of my Girl Scout troop when we go camping.


HASH BROWN SURPRISE

1 Package Shredded Hash browns
1 Pound of crumbled sausage, bacon, and ham
6 eggs, beaten
8 oz grated cheese (your choice)
1 small onion chopped
1 clove of garlic chopped
Salt and pepper to taste

Grease Dutch oven, skillet or pan. Add hash browns and top with meat. Beat eggs with onion, garlic, salt and pepper; pour over potato/meat mixture and top with cheese. Bake for about 30 minutes. Great with homemade salsa or chili!

I love Rachel Ray! Her 30 min meals is my kinda cooking, though she's way better at it than I am. Anyway, here's my recipe for you. Even Rachel could bake this & it only takes 30 min, okay maybe a little over just measure, pour & mix fast.

Butter Cake:
1cup butter, softened
1 cup sugar
2 cups flour
1 egg, slightly beaten

Mix ingredients. Place dough in greased & floured round cake pan. Bake at 375* for 30 min. Served warm with fresh fruit or canned & powdered sugar (optional). It's also good with ice-cream or ganosh. Freshly cut strawberries sugared in their own juices is my favorite to top it off with. Enjoy!

Thanks for offering a fabulous prize! For a fast lunch I cook a package of cheese tortellini, add 2 cups of frozen baby peas at the bottom of a colander and drain the cooked tortellini over the top of them. Put them both back in the pan and stir with a couple tablespoons of butter & fresh parmesan cheese. Stir together until peas are heated and cheese is melted.

Throw 1 can of stewed tomatoes, 1 can of diced tomatoes with green chilies, 1 can kidney beans, 1 can corn, 1 lb. cooked hamburger meat, and 1/2 loaf of velveeta in the crock pot. Add two TBS of taco seasoning. Turn to high and cook three hours. YUM-O! It's DELISH!

I would love a subscription to Rachel Ray. One of my favourite recipes, if you might call it that, is to grill our pizzas on the barbecue. I make the dough using the recipe on Todd English's web site, grill the rounds on one side, flip them over briefly, then remove them and add our toppings. Again, I use the pizza sauce recipe on Todd English's site. The pizzas then go back on the grill (I cook on low so they don't burn, but the cheese has time to melt and the toppings heat through). These are sooooo good. Almost like having a brick oven pizza.

Freezer Chicks are too cool!

In summer I use my slow cooker & microwave almost daily and my favorite recipe is for Summer Stewed Beef.

Cook up a blade steak straight from the freezer (or any small roast, steaks or other beef cuts) in a slow cooker along with 1/2 c. water, a generous splash of cabernet savignon or merlot wine, and a sprinkle of freshly ground black pepper. Leave on low overnight and thru the next day.

When you get home from work, sort thru the meat to discard any bones or bits of fat, then whisk in a flour/water mixture until thickened. Salt to taste.

Serve over brown rice (I make huge batches on cool days and then freeze in smaller portions to microwave on hot days).

Side dish of green beans w/sauteed garlic. Garnish with sliced tomato. Or cheat and serve with deli bean salad.

Oh yes, and don't forget to serve up with a glass of that leftover red wine, lightly chilled.
